Who Was Paul Kitching?

A renowned chef of Edinburgh’s 21212 Restaurant was Paul Kitching. Before relocating to York (city in England) as a commis chef, he began working as a kitchen porter in a Latin American restaurant in Newcastle. It was then that he discovered his passion for classical cooking. In his early twenties, he worked in Michelin-starred kitchens including Restaurant 74 and Gidleigh Park before earning his own star with his own restaurant, Juniper.

In 2009, he and his partner Katie O’Brien founded 21212, and within just six months, they had earned a Michelin star. Sadly, the restaurant’s star in the 2020 guide was lost.

Once, in an interview, a spokesperson asked him why he entered the hospitality sector, he told The Staff Canteen in 2016: “The cold and unemployment! After leaving school and being jobless, I worked as a laborer on a building site in Newcastle until I was fired. I received a position through the job center as a kitchen assistant during a chilly winter, and I immediately said, “I’m going to be a chef!”
